Preparation
Heat 1 cup of coconut milk together with 50 g of the curry paste and stir-fry until oil appears on top. Add 250 g of sliced beef or chicken and stir-fry until done. Add 1 cup water and bring to boil. Add some eggplant, cherry tomatoes, sweet basil and chili. Cook until tender. Add fish sauce to taste. Serve with cooked rice.
