Preparation
Prawns with achiote and garlic: 8 prawns, sweet potato purée, 1 tsp achiote seeds, 8 garlic cloves, black pepper, olive oil, and salt.
Place the achiote and olive oil in a pan over a very low heat and fry until it releases its intense red color and flavor and the oil is red and seedless. Then place the prawns in a bowl with this mixture, season with salt, black pepper, and plenty of grated garlic. Let it rest for 30 minutes in the refrigerator, then place it in a very hot pan until ready. Serve with sweet potato purée.
